I have a couple of forms on my site which requires the customer to select which products he wants to buy.

The customer checks a checkbox then selects the no. of those products he wishes to purchase.

There is a minimum order of 2 units so the dropdown is pre-populated with 2 and the user can select up to 12.

When the form sends the customer confirmation email, it sends a list of all products available whether they order them or not.

Is there a way to only include the ordered products in the email and ignore those not ordered?

One way that you might do this is with a hidden field and a bit of Javascript. Whenever a user updates the order, recalculate the value of the hidden field so that it contains the entire order (e.g., 1 x oak tables, 4 x oak chairs, etc). You can then display the hidden field in your e-mail

I've never seen a forum like this. Ask a question and get a canned auto reply and that's it. No follow-up, collaboration ...nothing.
