I've set up my user e-mail function in my form definition and written a Thank You e-mail, but when I submit the form, I get an error message saying that it cannot instantiate the mail function. What am I doing wrong? Thanks for any help you can give me.

I am going through the same thing. In the Joomla! admin, 'Global Configuration'->'Server'->'Mail Settings',the 'PHP Mail Function' works only sometimes and the 'SMTP Server' wouldn't work for me at all. I configured Joomla! for 'sendmail' and it seems to work so far but we'll see. I just made the change today.

Well, that didn't work. I've tried all three mail settings in Joomla! I'm at a loss.
