Is there an option to add a CAPTCHA so we can allow individuals visiting the site to submit an event but block spam 'bots??

Hoping the answer is 'yes'!

Unfortunately RSEvents!Pro does not include a CAPTCHA functionality. However, this can be implemented using a combination between RSEvents!Pro and RSForm!Pro, via the RSEvents!Pro - RSForm!Pro integration plugin which, basically, enables you to replace the default RSEvents!Pro event registration form with a custom RSForm!Pro form to which you can add a CAPTCHA or a reCAPTHCA field. I think this isn't the right awnser for this topic. This "custom form" is only for event registration. What the TS means is when a frontend user is adding a new event, there isn't a captcha option. Is this a function we can expect in a future update?

I am also VERY interested in this as a feature. It is very time consuming to have to go in and take out categories that are obviously created by spambots.

RSJoomla - WHEN are you going to add this MUCH needed option?
